Chocolate Chip Oatmeal Cookies

Based on how my cookies turned out (not what we were looking for…), here is a recipe for baking chocolate chip cookies at altitude - a little more liquid and a higher baking temperature. Chilling your dough for at least an hour - preferably overnight - will be helpful to keep the cookies from spreading out too much.

What You'll Need
Ingredients
- 1 cup all-purpose flour
- ½ teaspoon ground cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1½ cups old-fashioned rolled oats
- ⅔ cup unsalted butter, melted
- ½ cup light brown sugar
- ¼ cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon pure vanilla extract
- 1 cup semisweet chocolate chips
Directions
Step 1
In a medium bowl, combine flour, cinnamon, baking soda, and salt. Stir in the old-fashioned rolled oats.
Step 2
In a large bowl, beat together butter, light brown sugar, and granulated sugar together until well combined. Then add in the egg and vanilla extract.
Step 3
Add the dry ingredients into your large bowl and mix until everything is just combined. Then fold in the chocolate chips. Cover and chill in the refrigerator for at least 1 hour, or overnight.
Step 4
Preheat oven to 375° F. Scoop the dough onto a baking sheet lined with parchment.
Step 5
Bake for 12-14 minutes.
Step 6
Remove from the oven and cool for 5-10 minutes, then transfer to a wire rack to cool completely.
