How does your heritage influence your home cooking?

I grew up around food as a child. Abuela would make arroz con pollo and let us try it secretly while everyone watched baseball in the other room. Cooking allows me to be connected to my Cuban heritage, the flavors of my childhood, and those whom I loved and respected so much who have since passed on.

Does the dish you’re sharing today have a story behind it?

This is a dish I grew up eating every Sunday with my dad.

How would you describe your relationship to home cooking?

I started loving home cooking after college when I realized all of the best meals come from our own hands.

What do you like about cooking in the oven?

Less responsibility!

If you could only cook (and then eat!) one thing for the rest of your life, what would it be and why?

Vaca frita, arroz con frijoles and platanos maduros! Simply: Cuban food!

What You'll Need

Ingredients

  • Eggs
  • English muffins
  • Bacon
  • Avocado
  • Hash browns
  • Cheese
  • Hot honey

Directions

Step 1

Preheat the oven to 425°F. Bake hash browns and bacon in your Oven Pan for 15 – 20 minutes.

Step 2

Remove the Oven Pan from the oven and place on burners over medium-high heat.

Step 3

Crack eggs while bacon and hash browns stay warm.

Step 4

Add buttered english muffins to the pan to toast.

Step 5

Assemble the sandwiches and enjoy.
