Taco Tuesday

This recipe includes directions for how to make your own taco seasoning. I love doing this for a couple of reasons: It’s the most fresh and you probably have a lot of these spices hanging out in your cabinet. I love going through an entire spice jar before it expires (yes, spices DO expire!). However, you can totally buy the pre-packaged taco seasoning and it’s going to taste just as good.

For the Taco Meat:
- 1/2 pound ground beef
- 1.5 tablespoons taco seasoning (recipe to follow or use store-bought)
- 7 ounces canned fire-roasted diced tomatoes
- Salt and pepper to taste
- Cooking oil
For Taco Seasoning:
- 2 tablespoons chile powder
- 2 teaspoons dried Mexican oregano
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
For Serving:
- Tortillas or taco shells
- Diced tomatoes
- Shredded lettuce
- Shredded cheese
- Sour cream or Mexican crema
- Your favorite taco sauce
Directions
Step 1
Turn the Perfect Power Pot™ to Level 2 (high heat) and add a tablespoon of cooking oil. Break up the ground beef and add it to the pot. As the meat cooks, break it up with the supplied Beechwood Spatula. Cook on Level 2 (high heat) until it is well browned and begins to carmelize, about 10-15 minutes.
Step 2
Stir in the taco seasoning along with a big pinch of salt and some freshly ground black pepper. Mix the seasoning into the meat and cook for about a minute.
Step 3
Stir in the whole can of tomatoes. Fill the tomato can up with water and pour it into the pot. Toggle the heat setting to Level 1 (low heat).
Step 4
Simmer the meat, stirring occasionally, until most of the liquid has evaporated. Taste and adjust the seasoning with salt and pepper.
Step 5
To serve, warm tortillas or taco shells in your Wonder Oven™. Once warmed, place a big spoonful of the cooked meat in the tortilla or taco shell and top with your choice of toppings.
