This technology is the very first of its kind, setting a new standard in cookware. It uses ultra-durable titanium, which is 300% harder than stainless steel, to create an interior surface that is virtually indestructible. Mimicking the lotus effect (the phenomenon of water droplets forming on leaves, rather than being absorbed), the pattern pressed into the titanium makes the interior naturally hydrophobic, which in turn creates a nonstick effect. The surface simultaneously sears (really well, we might add), while the sunken pockets create airflow and a nonstick experience.
The original Large Always Pan has a ceramic nonstick coating that is super slippery. The Titanium Large Always Pan Pro doesn’t have a coating; the pressed interior surface is what gives it a nonstick effect. A key difference between cooking in the titanium NoCo™ versus ceramic nonstick is that food needs to cook through and self-release to achieve the full nonstick effect. It’s pretty genius, actually! Once the food has had sufficient contact with the heat, it will release itself to let you know it's ready to be flipped or plated.
The Titanium Large Always Pan Pro features a tri-ply construction that combines the high heat benefits of stainless steel or cast iron with the convenience of a nonstick effect. The original Large Always Pan also comes in our iconic colors while this pan has a chrome exterior.
The Titanium Large Always Pan Pro has a fully clad ultra-thick 3mm tri-ply construction, which means it's even thicker than most standard 5-ply cookware and just as durable. It has a highly conductive aluminum core, which heats quickly and evenly, a stainless steel exterior in a high-shine finish, and an ultra-hardened titanium interior with our revolutionary patent-pending NoCo™ nonstick technology. The fully-sealed rims encapsulate the core layer, making it dishwasher safe, and the rivet-free design handles make it more hygienic and easier to clean.
Of course it is. This was a real feat of engineering. The vast majority of nonstick pans on the market are still made with PFAS, otherwise known as Forever Chemicals. Even that “hybrid” pan is made with PFAS. Because of our proprietary technology, we were able to achieve the same effect without a coating and without using PFAS.
Our interior pattern and patent-pending technology is actually totally different from others on the market. While it may look similar, this is the first pan with a nonstick experience that is constructed, not coated. On the titanium surface, invisible to the naked eye, is a micro-textured surface that mimics a leaf's structure. That structure – combined with the ultra-hardened titanium – naturally repels liquids by mimicking a phenomenon found in nature called the Lotus Effect. Other patterned interiors don't utilize this technology and often coat their patterns with potentially toxic coatings made with PFAS (or Forever Chemicals). We worked for years on this patent-pending technology to be able to create a pan that lasts a lifetime without the toxins.
The Titanium Large Always Pan Pro excels at searing, flipping, deglazing, deep frying, and so much more. Think: pan-fried potatoes, a perfectly seared steak, crispy fish, morning omelettes, creamy pasta dishes, and so much more.
Like you should with any pan, preheat it for 90 seconds. Coat the interior of your pan with at least a teaspoon of high smoke point oil to activate the nonstick effect.
Unlike the original Large Always Pan, this one is dishwasher safe. For daily maintenance, put it in the dishwasher or use a bristle brush on the interior. Make sure you scrub in between those micro-dots to prevent buildup. Use a soft sponge on the exterior to avoid scratches. To eliminate any food build-up in between the dots, make a paste of baking soda and vinegar and scrub the interior. Or, simply deglaze with boiling water and a tablespoon of baking soda on the stovetop.
To maintain the nonstick effect, we recommend rubbing a teaspoon of neutral oil on the interior of the pan after cleaning and before storage. Deep cleans or dishwasher cycles can strip natural oils, so you may need to try this seasoning tip a few times to get the nonstick going again.
