4 peaches, peel and chopped into small pieces
1/4 cup sugar
2 tbsp. lemon juice
1/2 tsp. salt
1/4 of mint, chopped
- Add peaches, sugar, salt, and lemon juice to the carafe of a blender. Add in a 1/2 cup of cold water and blend till smooth. Stir the chopped mint into the peach puree.
- Pour peach puree into a baking dish and place in the freezer.
- Every 30 minutes, run a fork through the puree. After 2 to 3 hours the ice should be fluffy.
- Serve in a chilled glass or bowl. Garnish with mint and other berries.
